PURPOSE OF THE UNIT STANDARD 
The learner will be able to prepare, cook and assemble food for quick service in order to meet customer- and organisational requirements.

1. Explain the reasons why waste must be disposed of correctly and hygienically.

2. Explain the interrelationship between food hygiene and quality of food.

3. Stress the importance of keeping cooking-, storage areas and equipment hygienically.

4. Explain the reasons why food not for immediate use should be cooled rapidly or kept at a safe temperature after cooking.

5. State organisational requirements for preparing food for quick service.

6. Identify appropriate garnishes and sauces for quick service food.

1. Arrange or create an environment in which the learner can be fairly assessed against the outcomes.

    2. Evaluate the learner's ability to meet the outcomes consistently.

  • This unit standard can be assessed by using a combination of observation, simulation, product sample and questioning.
  • Observation and product sample supplemented by questioning to cover food items.
  • Simulation or questioning to cover unexpected situations.

    8. Place utensils and equipment conveniently before service and explain why.

    9. Check that food stocks are held ready for use at the correct temperature.

    10. Prepare food items and explain the importance of thawing food before cooking.

    11. Given a range of quick service food items, select the correct cooking method for the type of quick service food item and give reasons for the choice. (Range of food items: pre-prepared, convenience)

    12. Check that cooking equipment is at the correct temperature before cooking.

    13. Cook the food, assemble and place in suitable containers.

    14. Assemble cooked food products with correct portions of other ingredients.

    15. Clean preparation areas and equipment after use.

    16. Dispose of products not served within the specified time and explain why.

    17. Describe decisions made and reasons for action taken in response to unexpected situations. (Range of unexpected situations: injury, insufficient food items, cooking equipment at incorrect temperature, food items still frozen, unusual customer requests)

    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
    1. Anyone assessing a learner against this unit standard must be registered as an assessor with the relevant ETQA.

    2. Any institution offering learning that will enable achievement of this unit standard must be registered with the FE/HE Registrar.

    3. Any institution wishing to receive skill development grants must be accredited with the relevant ETQA. Such an institution will also be registered with the relevant SETA.

    4. Moderation of assessment will be done by the relevant ETQA at its discretion. 

    UNIT STANDARD ESSENTIAL EMBEDDED KNOWLEDGE 
    Embedded knowledge and Critical cross-field outcomes have been included within the specific outcomes category. This has been done as it was deemed necessary to ensure holistic assessment occurred. The specific outcomes can be applied in a range of contexts. Many of the outcomes have been written in such a way that competence must be demonstrated in the context as opposed to in isolation from a context. The specific outcomes are comparable to outcomes used internationally. We therefore structured outcomes using the format noun + verb + condition (modifying phrase)

    Specific outcomes have been split into three categories

    a. knowledge and understanding (what the learner must know and understand)
    b. decision-making and acting (what the learner must do)
    c. adapting performance ( including reflexive competence)

    In many instances there are more than six specific outcomes, as the inclusion of critical cross-field outcomes and embedded knowledge has increased the number of specific outcomes. If competencies are to be clustered in a meaningful way, then these unit standards cannot be split.

  • Special emphasis should be placed on the importance of holding foods at the correct temperature.

  • A new employee should be able to achieve this unit within 1 month of being trained.
  • Ongoing measurement of the learner's ability to meet this standard is recommended.
