PURPOSE OF THE UNIT STANDARD
This unit standard is for anyone who has to determine the freezing point of milk with a cryoscope.

A person credited with this unit standard is able to:·
  • Demonstrate an understanding of determining the freezing point of milk.
  • Prepare for determining the freezing point of milk.
  • Calibrate a cryoscope.
  • Determine the freezing point of milk.
  • Report on the quality of milk in terms of its freezing point.

This unit standard will contribute to the full development of the learner within the dairy manufacturing environment by providing recognition, further mobility and transportability within the field of manufacturing and assembly. The skills, knowledge and understanding demonstrated within this unit standard are essential for social and economic transformation and upliftment within the dairy manufacturing and processing environment.

  • LEARNING ASSUMED TO BE IN PLACE AND RECOGNITION OF PRIOR LEARNING
    Description of required skills:
  • Communication and mathematical literacy at NQF Level 2.
  • Knowledge of basic physics and chemistry principles at NQF Level 1.

  • UNIT STANDARD RANGE
In the context of this unit standard is determining the freezing point of milk refers to the use a cryoscope and not the use of a Lactometer in order to determine the amount of water added to milk.

    Specific Outcomes and Assessment Criteria:

    SPECIFIC OUTCOME 1
Demonstrate an understanding of determining the freezing point of milk.

    ASSESSMENT CRITERIA

    ASSESSMENT CRITERION 1
Freezing point of milk is defined according to standard dairy principles.

    ASSESSMENT CRITERION 2
The principles of determining the freezing point of milk are explained according to standard dairy principles.
    ASSESSMENT CRITERION RANGE
    The explanation includes:
  • Interpretation of the temperature scale, including sub-zero temperature values.
  • Freezing point of milk in relation to the freezing point of water.
  • Addition of water to milk, and its effect on the freezing point.
  • Addition of soluble solids to milk, and its effect on the freezing point.

  • ASSESSMENT CRITERION 3
The purpose of determining the freezing point of milk is explained according to standard dairy principles.

    ASSESSMENT CRITERION 4
The importance of determining the freezing point of milk as quality test is explained in terms of the effect of processing milk with a too high freezing point on final product quality.

    SPECIFIC OUTCOME 2
Prepare for determining the freezing point of milk.

    ASSESSMENT CRITERIA

    ASSESSMENT CRITERION 1
