PURPOSE OF THE UNIT STANDARD 
This unit standard is intended for a person working in a food handling environment who contributes to the food safety system by understanding the control of pests and waste materials within his/her work environment.

A person credited with this unit standard is able to:
  • Demonstrate an understanding of pest control in a food handling environment.
  • Apply knowledge of pest control within scope of work.
  • Demonstrate an understanding of the control of waste materials in a food handling environment.
  • Apply knowledge of the control of waste materials within scope of work.

    This unit will contribute to the full development of the learner within a food handling environment by providing recognition, further mobility and transportability within the mentioned sector. The skills, knowledge and understanding demonstrated within this unit standard are essential for social and economic transformation and contribute to the upliftment and economic growth within the food handling environment.

  • UNIT STANDARD RANGE 
    The context of this unit standard includes any food handling environment. A food handling environment includes areas of primary production, processing, manufacturing, packaging, distribution, merchandising, retailing, preparation and final presentation to the consumer.

    Pest categories are identified according to standard food safety principles.

    The impact of the relevant pest control method on the safety of the food product being handled is explained according to standard food safety principles.

    Preventive measures against contamination of food as a result of pest control methods are identified and explained according to standard operating procedures.

    The applicable personal safety requirements during the handling of waste materials are adhered to according to standard operating procedures.

    Problems during the handling of waste materials are identified and solved within scope of work. 


    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
  • Anyone assessing a learner or moderating the assessment of a learner against this unit standard must be registered as an assessor or moderator respectively with the relevant Education and Training Quality Assurance Body (ETQA), or with another ETQA that has a Memorandum of Understanding with the relevant ETQA.

    Terminology: Clarification/ explanation/ definition
  • Food safety: Assurance that food will not cause harm to the consumer when it is prepared and/or eaten according to its intended use. Food safety is related to the occurrence of food safety hazards and does not include other human health aspects related to e.g. malnutrition.
  • Food safety hazard: Biological, chemical (including allergens) or physical agent in, or condition of, food with the potential to cause an adverse health effect.
  • Standard operating procedures: Refer to company procedures, prescribed procedures from the manufacturer, personal safety and food safety practices and procedures, good manufacturing practices, best practices, applicable legislation, time frames, recipes and specifications.
