PURPOSE OF THE UNIT STANDARD 
A person credited with this unit standard is able to:
  • demonstrate knowledge of moisture control in Gouda or Grana type cheese curd,
  • control the moisture content in Gouda or Grana type cheese curd,
  • handle curd for the manufacturing of Gouda or Grana type cheese,
  • monitor and control the manufacturing of a green Gouda or Grana type cheese.

    The scope of this unit standard is for anyone who has to manufacture green Gouda or Grana type cheese.
